1. What is Surimi?
Surimi (擂り身) is also known as crab stick, with the main ingredient being ground fish meat - a traditional Japanese dish with a popular ingredient used for many dishes such as oden noodles, soba, ramen, udon,...
Surimi with its characteristic red color is similar to fish sausage and fish cake in Vietnam.

. History of Japanese Surimi
According to many Japanese documents, Surimi was processed by people more than 900 years ago. In particular, Surimi is also used by Japanese people to process kamaboko and many other dishes. With the popularity of the dish, Surimi was developed into an industry by Japanese people since the 1960s.
Currently, 2 to 3 million tons of fish worldwide are used as raw materials for surimi processing. The United States and Japan are the largest surimi producers, and Thailand imports quite a lot.
3. How to make Japanese standard Surimi
a. Prepare ingredients

The raw materials are fresh, delicious fish with lots of meat. Choose low-value, high-yield fish with few bones and white meat such as tuna, mackerel, croaker, shark... Mainly from the families: Micropogon, Pseudosciaena, arophrys, Microstoruns spp., Bothidae and Pleuronectidae.
These types of fish can be found by interns at seafood markets or in supermarkets.
c. Where to buy Surimi?
If you don't have much time or are not good at cooking, then convenience stores and supermarkets in Japan sell ready-made Surimi crab sticks. If you are in Vietnam, you don't need to worry too much, you can buy them at supermarkets specializing in selling Japanese goods or you can buy them through Japanese order shops. If you want it cheap, you can buy Surimi from domestic manufacturers.
